Ingredients

  • Cake Layers:
  • 2 ⅛ cups all-purpose flour
  • 2 cups white sugar
  • ¾ cup unsweetened cocoa powder
  • 1½ teaspoons baking powder
  • ¾ teaspoon baking soda
  • ¾ teaspoon salt
  • 3 large eggs
  • 1 cup milk
  • ½ cup vegetable oil
  • 1 tablespoon vanilla extract
  • Cherry Filling:
  • 2 (20 oz) cans pitted sour cherries
  • 1 cup white sugar
  • ¼ cup cornstarch
  • 1 teaspoon vanilla extract
  • Whipped Cream Frosting:
  • 3 cups heavy whipping cream
  • ⅓ cup confectioners’ sugar


Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line two 9-inch cake pans.
  2. Whisk flour, sugar, cocoa, baking powder, baking soda, and salt in a large bowl.
  3. Add eggs, milk, oil, and vanilla; beat until smooth. Pour into pans.
  4. Bake for 35 minutes or until a toothpick comes out clean. Cool completely.
  5. For cherry filling: combine cherries, sugar, cornstarch, and juice; cook until thick.
  6. Whip cream and sugar until stiff peaks form.
  7. Split each cake layer; fill and frost with whipped cream and cherries.
  8. Top with extra cream, cherries, and chocolate shavings.
