Ingredients

  • 4 cups blueberries (fresh or frozen) (600 g)
  • 1/2 cup granulated sugar (100 g)
  • 1 teaspoon lemon zest (2 g)
  • 6 Tablespoons butter (85 g)
  • For the batter:
  • 1 cup all-purpose flour (120 g)
  • 1 cup granulated sugar (200 g)
  • 2 teaspoons baking powder (8 g)
  • 1/4 teaspoon salt (1.5 g)
  • 3/4 cup milk (180 ml)
  • Ground cinnamon for topping


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Slice butter into pieces and place them in a 9×13-inch baking dish. Place the dish in the oven to melt the butter while it preheats.
  3. In a mixing bowl, combine blueberries, sugar, and lemon zest. Stir to coat the berries evenly.
  4. In another bowl, whisk together the flour, sugar, baking powder, and salt. Stir in the milk until just combined. Do not overmix.
  5. Pour the melted butter evenly across the bottom of the baking dish.
  6. Spoon the blueberry mixture over the melted butter.
  7. Drizzle the batter over the top, leaving some fruit exposed. Sprinkle lightly with ground cinnamon.
  8. Bake for 35–40 minutes or until the top is golden and edges are bubbling.
  9. Let cool for 10 minutes before serving warm with vanilla ice cream or whipped cream.

Notes

  • You can use frozen blueberries, no need to thaw them first.
  • For extra texture, sprinkle coarse sugar on top before baking.
  • Store leftovers covered in the refrigerator for up to 3 days, or freeze for up to 2 months.
  • Reheat in a 325°F oven for 10–15 minutes or in the microwave for 30 seconds per serving.
