Ingredients
Cookie Layer:
- 1/2 cup butter, softened
- 1/2 cup light brown sugar
- 1/4 cup white sugar
- 1/2 teaspoon vanilla extract
- 1 large egg
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 cup semisweet chocolate chips
Brownie Layer:
- 1 cup white sugar
- 1/2 cup butter, melted
- 1 teaspoon vanilla extract
- 2 eggs
- 1/3 cup cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon baking powder
- 1/8 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Beat butter, brown sugar, white sugar, and vanilla until creamy. Add egg and mix well.
- Whisk flour, salt, and baking soda. Combine with butter mixture. Stir in chocolate chips and spread in pan.
- In another bowl, mix sugar, melted butter, vanilla, and eggs. Add cocoa powder and stir until smooth. Mix in flour, baking powder, and salt.
- Pour brownie batter over cookie dough and spread evenly.
- Bake for 20–25 minutes, or until a toothpick inserted in the center comes out mostly clean.
- Cool completely before slicing into bars.
Notes
- Store brookies in an airtight container at room temperature for up to 4 days.
- For softer texture, reheat each bar in the microwave for 10 seconds before serving.
- Delicious with a scoop of vanilla ice cream or a glass of milk.
