Ingredients

  • 1/2 cup (113g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (100g) brown sugar, packed
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 1/4 cups (156g) all-purpose flour
  • 1/2 cup (45g) natural unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 2 teaspoons (10ml) milk (any kind)
  • 1/2 cup (100g) granulated sugar (for coating)
  • 2224 Andes chocolate mints, unwrapped


Instructions

  1. In a large bowl, beat butter, granulated sugar, and brown sugar on medium-high speed until light and fluffy (about 3 minutes).
  2. Add the egg and vanilla extract, mixing until fully combined.
  3. Whisk flour, cocoa, baking soda, and salt in a separate bowl, then combine with the wet mixture.
  4. Add milk and beat until a thick, sticky dough forms.
  5. Cover tightly and chill dough for at least 2 hours (or up to 3 days).
  6. Preheat oven to 350°F (177°C). Line baking sheets with parchment paper.
  7. Roll 1 heaping tablespoon of dough into balls, coat in granulated sugar, and space 2–3 inches apart on the tray.
  8. Bake for 10–12 minutes or until the edges set. If not spreading by minute 9, tap the tray lightly to encourage spreading.
  9. Cool cookies for 2 minutes on the tray. Press 1 Andes mint on top of each cookie and let melt for 5 minutes.
  10. Swirl the melted chocolate gently, then transfer cookies to a rack to cool completely. The mint topping will set matte in about 1 hour.
