Ingredients

  • 12 strips bacon
  • 2 cups all-purpose flour
  • 2 cups white sugar
  • ¾ cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon sea salt
  • 1 cup cold strong brewed coffee
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 eggs
  • 1 tablespoon unsweetened cocoa powder for dusting


Instructions

  1. Preheat oven to 375°F. Line 24 muffin cups and spray lightly.
  2. Cook bacon until evenly browned and crispy. Drain and crumble.
  3. Whisk dry ingredients together. Add coffee, buttermilk, oil, and eggs. Stir until blended.
  4. Fold in three-quarters of bacon. Divide batter into liners.
  5. Bake 20 to 25 minutes until tops spring back.
  6. Cool completely. Frost and sprinkle reserved bacon on top. Dust with cocoa.
