Ingredients
- 12 strips bacon
- 2 cups all-purpose flour
- 2 cups white sugar
- ¾ cup unsweetened cocoa powder
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- ½ teaspoon sea salt
- 1 cup cold strong brewed coffee
- 1 cup buttermilk
- ½ cup vegetable oil
- 2 eggs
- 1 tablespoon unsweetened cocoa powder for dusting
Instructions
- Preheat oven to 375°F. Line 24 muffin cups and spray lightly.
- Cook bacon until evenly browned and crispy. Drain and crumble.
- Whisk dry ingredients together. Add coffee, buttermilk, oil, and eggs. Stir until blended.
- Fold in three-quarters of bacon. Divide batter into liners.
- Bake 20 to 25 minutes until tops spring back.
- Cool completely. Frost and sprinkle reserved bacon on top. Dust with cocoa.
