Soft, chewy, and tangy, these Easy Lemon Cookies use a cake mix shortcut for a foolproof dessert in under 20 minutes.
Ingredients
- 1 (15.25 oz) package lemon cake mix
- 2 large eggs
- ⅓ cup vegetable oil
- 1 teaspoon lemon extract
- ⅓ cup confectioners’ sugar for decoration
Instructions
- Preheat oven to 375°F (190°C).
- Mix lemon cake mix, eggs, oil, and lemon extract until smooth.
- Drop teaspoonfuls into powdered sugar and roll lightly.
- Place on an ungreased baking sheet 2 inches apart.
- Bake 6–9 minutes until light golden on bottom.
- Cool and serve.
Notes
- For stronger flavor, add lemon zest or glaze with lemon icing.
