Ingredients

  • 1½ cups all-purpose flour (180g)
  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened (170g)
  • 1 cup granulated sugar (200g)
  • 2 large eggs
  • ¼ cup sour cream, room temperature (60g)
  • 1 tablespoon vanilla extract
  • 2 cups ripe peaches, peeled, pitted, and sliced or chopped (400g / 2 to 3 peaches)


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan with butter or baking spray.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large mixing bowl, beat butter until creamy. Add sugar and beat until light and fluffy, about 3 minutes.
  4. Add eggs one at a time, mixing well after each addition. Beat in sour cream and vanilla.
  5. Gradually add flour mixture on low speed until just combined.
  6. Fold in three-quarters of the peaches gently.
  7. Spread the batter into the pan. Arrange remaining peaches on top and sprinkle with sugar if desired.
  8. Bake for 45 minutes, or until a wooden pick inserted in the center comes out clean.
  9. Cool in pan for 30 minutes before serving. Store covered at room temperature for up to 3 days.

Notes

  • For extra flavor, sprinkle cinnamon or nutmeg on top before baking.
  • If using canned peaches, drain well to prevent sogginess.
  • Serve warm with vanilla ice cream or whipped cream for a comforting finish.
