Ingredients
- 1 cup white sugar
- 1 cup butter or shortening
- 1 cup honey
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon ground ginger
- 4 cups all-purpose flour
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Melt sugar, butter, and honey in a saucepan over low heat until smooth. Let cool completely.
- Whisk eggs, vanilla, baking soda, and ginger together in a bowl.
- Gradually stir the egg mixture into the cooled honey mixture until combined.
- Add flour one cup at a time until a soft dough forms.
- Drop dough by teaspoonfuls onto baking sheets about 2 inches apart.
- Bake for 12–15 minutes, or until golden brown around the edges.
- Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
Notes
- These cookies taste even better the next day as the honey deepens in flavor. Store in an airtight tin for up to a week.
