Description
- These Healthy Apple Muffins are soft, fluffy, and naturally sweetened with maple syrup and applesauce. Packed with shredded apple and warm spices, they’re wholesome, satisfying, and ready in under 30 minutes.
Ingredients
- 2 cups (260g) whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground allspice
- 1/2 teaspoon salt
- 2 large eggs, at room temperature
- 3/4 cup (180g) unsweetened applesauce
- 2/3 cup (160ml) pure maple syrup
- 1/3 cup (70g) melted coconut oil (or vegetable oil or butter)
- 1 1/2 teaspoons vanilla extract
- 2 cups (210g) shredded apple (about 2 peeled apples)
- Optional: 3/4 cup (90g) chopped pecans or walnuts
- Optional: 1 tablespoon coarse sugar for topping
Instructions
- Preheat oven to 425°F (218°C). Line a 12-cup muffin pan with liners or grease with spray.
- In a large bowl, whisk flour, baking powder, baking soda, cinnamon, allspice, and salt.
- In another bowl, whisk eggs, applesauce, maple syrup, oil, and vanilla until smooth.
- Pour wet ingredients into dry, stir gently, then fold in shredded apple and nuts. Batter will be thick.
- Divide batter into muffin cups, filling to the top. Sprinkle coarse sugar if desired.
- Bake for 5 minutes at 425°F, then reduce to 350°F (177°C) and bake 16–18 minutes more.
- Let muffins cool 5 minutes in the pan, then transfer to a wire rack to finish cooling.
Notes
- Muffins keep at room temperature for up to 3 days or refrigerate up to a week.
- For a lighter muffin, replace half the oil with more applesauce.
- These freeze well, wrap individually and thaw overnight or microwave for 15–20 seconds.
