Description

  • Soft Homemade Funfetti Cupcakes made from scratch with real butter, rainbow sprinkles, and fluffy vanilla buttercream frosting.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 cup unsalted butter, room temperature
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 1/2 teaspoons vanilla extract
  • 1/3 cup rainbow sprinkles
  • 3/4 cup unsalted butter, room temperature
  • 3 cups powdered sugar
  • 1/4 cup milk
  • 1 tablespoon vanilla extract
  • Rainbow sprinkles for decorating


Instructions

  1. Preheat oven to 350°F and line a cupcake pan with paper liners.
  2. Combine flour, sugar, baking powder, and salt in a mixing bowl. Add butter and mix until crumbly.
  3. Add eggs one at a time, then mix in milk and vanilla until smooth. Fold in sprinkles gently.
  4. Fill liners two-thirds full and bake for 15–20 minutes until a toothpick comes out clean.
  5. Cool completely before frosting.
  6. Cream butter for frosting until fluffy. Add powdered sugar, milk, and vanilla and beat until light.
  7. Frost cupcakes and decorate with sprinkles.

Notes

  • Use rainbow jimmies for best color.
  • Do not overmix the batter.
