- Soft Homemade Funfetti Cupcakes made from scratch with real butter, rainbow sprinkles, and fluffy vanilla buttercream frosting.
Ingredients
- 1 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1 1/4 teaspoons baking powder
- 1/2 teaspoon kosher salt
- 1/2 cup unsalted butter, room temperature
- 2 large eggs
- 1/2 cup whole milk
- 1 1/2 teaspoons vanilla extract
- 1/3 cup rainbow sprinkles
- 3/4 cup unsalted butter, room temperature
- 3 cups powdered sugar
- 1/4 cup milk
- 1 tablespoon vanilla extract
- Rainbow sprinkles for decorating
Instructions
- Preheat oven to 350°F and line a cupcake pan with paper liners.
- Combine flour, sugar, baking powder, and salt in a mixing bowl. Add butter and mix until crumbly.
- Add eggs one at a time, then mix in milk and vanilla until smooth. Fold in sprinkles gently.
- Fill liners two-thirds full and bake for 15–20 minutes until a toothpick comes out clean.
- Cool completely before frosting.
- Cream butter for frosting until fluffy. Add powdered sugar, milk, and vanilla and beat until light.
- Frost cupcakes and decorate with sprinkles.
Notes
- Use rainbow jimmies for best color.
- Do not overmix the batter.
- Cool cupcakes fully before frosting.
