Ingredients
- 1 ½ cups unsalted butter, softened
- ¾ cup confectioners’ sugar
- ¾ teaspoon salt, or to taste
- 1 ½ cups finely ground almonds
- 4 ½ teaspoons vanilla extract
- 3 cups sifted all-purpose flour
- ⅓ cup confectioners’ sugar, for rolling
Instructions
- Gather all ingredients and preheat the oven to 325°F (165°C).
- Beat butter, ¾ cup confectioners’ sugar, and salt in a large bowl with an electric mixer until smooth and creamy, 2–3 minutes.
- Mix in the ground almonds and vanilla extract until well combined.
- Gradually blend in the sifted flour until dough forms.
- Shape the dough into 1-inch balls (or crescents) using about 1 teaspoon per cookie; place 1 inch apart on ungreased cookie sheets.
- Bake for 15–20 minutes, until edges are just golden.
- Cool for about 15 minutes, then roll cookies in remaining confectioners’ sugar.
- Serve and enjoy!

- For a flavor twist, add a hint of almond extract or lemon zest.
- Cookies keep fresh for up to a week in an airtight container.
