Ingredients
- 1/3 cup butter
- 1/3 cup brown sugar replacement
- 1/3 cup allulose or xylitol
- 1/2 cup heavy whipping cream
- 1 teaspoon vanilla extract
- 3 tablespoons unsweetened cocoa powder
- 1/4 teaspoon salt
- 3 large eggs
- 1 cup shredded unsweetened coconut
- 1 cup chopped pecans
- 1/3 cup sugar-free chocolate chips
Instructions
- Preheat the oven to 325°F and grease a 9-inch glass or ceramic pie dish.
- In a saucepan over medium-low heat, melt butter with both sweeteners, whisking until dissolved.
- Add heavy cream, vanilla, cocoa powder, and salt. Whisk until smooth.
- Remove from heat and let cool slightly. Whisk in eggs one at a time until glossy.
- Fold in shredded coconut, chopped pecans, and sugar-free chocolate chips.
- Pour mixture into the prepared dish and bake 25–35 minutes, until edges set and center jiggles slightly.
- Cool completely before serving. Refrigerate for best texture.
