Ingredients

Roasted Strawberries:

  • 2 cups (288 g) quartered strawberries
  • 2 tsp allulose sweetener (or any granulated sweetener)
  • 1/4 tsp vanilla extract

Mascarpone Mousse:

  • 8 oz (226.8 g) mascarpone cheese, softened
  • 3 oz (85 g) cream cheese, softened
  • 1/3 cup (63 g) powdered sweetener
  • 1 tsp vanilla extract
  • 3/4 cup (178.5 g) whipping cream


Instructions

  1. Preheat the oven to 375ºF and lightly grease a medium-sized baking dish.
  2. Add strawberries to the dish, sprinkle with allulose, drizzle with vanilla extract, and toss to coat.
  3. Roast for 20–25 minutes until tender and glossy, then cool.
  4. In a large bowl, beat mascarpone, cream cheese, powdered sweetener, and vanilla until smooth.
  5. In another bowl, whip heavy cream until stiff peaks form.
  6. Fold whipped cream gently into the mascarpone mixture until fully blended.
  7. Spoon or pipe the mousse into dessert cups and top with roasted strawberries.
  8. Serve immediately or chill before serving.
