Ingredients
Roasted Strawberries:
- 2 cups (288 g) quartered strawberries
- 2 tsp allulose sweetener (or any granulated sweetener)
- 1/4 tsp vanilla extract
Mascarpone Mousse:
- 8 oz (226.8 g) mascarpone cheese, softened
- 3 oz (85 g) cream cheese, softened
- 1/3 cup (63 g) powdered sweetener
- 1 tsp vanilla extract
- 3/4 cup (178.5 g) whipping cream
Instructions
- Preheat the oven to 375ºF and lightly grease a medium-sized baking dish.
- Add strawberries to the dish, sprinkle with allulose, drizzle with vanilla extract, and toss to coat.
- Roast for 20–25 minutes until tender and glossy, then cool.
- In a large bowl, beat mascarpone, cream cheese, powdered sweetener, and vanilla until smooth.
- In another bowl, whip heavy cream until stiff peaks form.
- Fold whipped cream gently into the mascarpone mixture until fully blended.
- Spoon or pipe the mousse into dessert cups and top with roasted strawberries.
- Serve immediately or chill before serving.
