Ingredients

Cake:

  • 2 cups (220 g) almond flour
  • 2/3 cup (121.33 g) Swerve Sweetener
  • 1/4 cup (27 g) unflavored whey protein powder (or egg white protein powder)
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 6 tbsp (85 g) butter, melted
  • 1/3 cup (79 ml) water
  • 2 tsp vanilla extract
  • 3 tbsp (3.04 tbsp) cocoa powder (Dutch process recommended)
  • 2 to 3 tbsp (2.03 tbsp) warm water or coffee

Frosting:

  • 1 recipe keto chocolate frosting


Instructions

  1. Preheat the oven to 350ºF and grease an 8-inch round metal baking pan. Line the bottom with parchment paper and grease the parchment.
  2. In a large bowl, whisk together almond flour, sweetener, protein powder, baking powder, and salt.
  3. Add eggs, melted butter, water, and vanilla extract; whisk until smooth.
  4. Transfer one-third of the batter to a separate bowl and mix in cocoa powder with 2–3 tablespoons of warm water or coffee.
  5. Drop a spoonful of vanilla batter into the center of the pan, followed by a spoonful of chocolate batter in the center of that. Alternate until all batter is used.
  6. Tap the pan gently to spread the batter evenly.
  7. Bake for 25–30 minutes or until the top is just firm to the touch.
  8. Cool completely, then run a sharp knife around the edge and flip out onto a wire rack.
  9. Prepare the keto chocolate frosting and spread evenly over the cooled cake.
  10. Optional: Sprinkle with keto sprinkles or shaved dark chocolate before serving.
