Ingredients

  • 3 cups cake flour
  • 1 tsp baking soda
  • 2 tbsp cocoa powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter
  • 2 cups sugar
  • 1 cup oil
  • 4 large eggs (separated)
  • 1 tbsp vanilla
  • 1 tsp vinegar
  • Red food coloring
  • 1 cup buttermilk
  • 16 oz cream cheese
  • 3/4 cup butter (frosting)
  • 5 cups confectioners’ sugar
  • 1 1/2 tsp vanilla (frosting)
  • Pinch of salt


Instructions

  1. Preheat oven to 350°F. Grease and line pans.
  2. Whisk flour, baking soda, cocoa, and salt.
  3. Beat butter, sugar, and oil until fluffy.
  4. Add yolks, vanilla, and vinegar.
  5. Alternate dry ingredients with buttermilk; add color.
  6. Whip egg whites to stiff peaks; fold in.
  7. Divide batter and bake 30–32 minutes.
  8. Cool cakes completely.
  9. Beat frosting ingredients until creamy.
  10. Assemble, frost, and chill before serving.

Notes
